Baba Ghanoush

It’s Football season, time to gather around the electronic device with your best buds to cheer on your favorite team. Or maybe you are tailgating before the game. Whatever you’re doing, having a nice healthy tasty dip is essential. 

We love eggplant so making a baba ghanoush was a no brainer. We love to eat this with fresh vegetables, crackers or chips. It’s even good on top of a buddha bowl. Have you ever made one of those? Use left over rice, quinoa, or teff, top with leftover roasted and/or fresh vegetables, sprouts and good leafy greens.  Top off the whole bowl with a healthy dollop of baba ganoush. Your tummy will be happy and satisfied. ​

Here is what you'll need to make this tasty Lebanese inspired dish. 

  • 1 large eggplant, around close to 2 lbs 
  • ¼ cup tahini 
  • 3 garlic cloves 
  • ¼ cup of fresh lemon juice
  • ½ tsp ground cumin
  • ¼ tsp sea salt
  • optional garnishments: olive oil, paprika and parsley

​Directions: 
  • Preheat the oven to 400°F, and line the baking sheet with parchment.
  • Cut eggplant in half, brush with olive oil, then prick with a fork several times, and place flesh-side down on a parchment-lined baking sheet.
  • Bake for 30 minutes. Cool slightly and scoop out the eggplant meat.
  • Add cooked eggplant flesh, tahini, garlic, lemon juice, cumin, and salt to the jar and secure lid.
  • Select "Dips" cycle or blend on a Medium to Medium-Low speed for 20-30 seconds.
  • Transfer to a serving bowl
  • Optional: garnish with oil, paprika, and parsley.
  • Serve with fresh vegetables, crackers, naan or chips

Cut eggplant in half and coat with olive oil, then place face down. Back for about 30-35 minutes

Place scooped out flesh of the eggplant, plus garlic cloves, tahini, lemon juice and spice in the blender or food processor.  

Serve with fresh vegetables or crackers. Bon appetite! 😘
