It’s Football season, time to gather around the electronic device with your best buds to cheer on your favorite team. Or maybe you are tailgating before the game. Whatever you’re doing, having a nice healthy tasty dip is essential.
We love eggplant so making a baba ghanoush was a no brainer. We love to eat this with fresh vegetables, crackers or chips. It’s even good on top of a buddha bowl. Have you ever made one of those? Use left over rice, quinoa, or teff, top with leftover roasted and/or fresh vegetables, sprouts and good leafy greens. Top off the whole bowl with a healthy dollop of baba ganoush. Your tummy will be happy and satisfied.
